Creamy Mushroom Soup

Ingredients:

  • 1 tablespoon butter
  • 1 cup sliced mushrooms
  • 1/2 cup chopped onion
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper, to taste

Directions:

  1. Melt the butter in a medium saucepan over medium heat.
  2. Add the mushrooms and onion and cook until softened, about 5 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Reduce the heat to low and simmer for 10 minutes.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Serve hot.

Notes:

  • Use a deep saucepan to prevent splattering.
  • For a thicker soup, puree some of the cooked mushrooms and broth in a blender before adding the cream.
