Ingredients:
- 1 tablespoon butter
- 1 cup sliced mushrooms
- 1/2 cup chopped onion
- 2 cups chicken broth
- 1/2 cup heavy cream
- Salt and pepper, to taste
Directions:
- Melt the butter in a medium saucepan over medium heat.
- Add the mushrooms and onion and cook until softened, about 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat to low and simmer for 10 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot.
Notes:
- Use a deep saucepan to prevent splattering.
- For a thicker soup, puree some of the cooked mushrooms and broth in a blender before adding the cream.
